You will first meet wine at the Ristoro l’Antica Scuderia when you enter the restaurant. Once you have taken your place at table, you will be surprised by the extensive wine list: hundreds of labels and thousands of bottles. A wide selection of the finest Italian and French wines, personally chosen by Stefano.
There are many gems to try, not least the Tuscan reds, such as Brunello di Montalcino and Chianti Classico Riserva. Among the whites, you’ll find the Supertuscans, magnificent Italian wines, Champagne, Burgandy pinot and the finest chateau wines.
A journey that begins in the Langhe in Piedmont and ends in Sicily, crossing the entire penisola in search of quality and at times venturing beyond Italy’s borders.
If you love wine you’ll discover new labels and experience all the emotions that the tastes and aromas of reds, rosés, and whites can give. The restaurant also offers the unique experience of the Winemachine, allowing you to taste high quality wines from top years by the glass.

Stefano, with his expertise in fine wines, is the keeper of the cellar. He proposes a vast selection of reds and whites to sip at the table, each matched with one of the dishes created by his wife Maria, or to enjoy by the glass – because the Ristoro is also a wine shop and an enoteca offering the opportunity to sample the cellar. The wine list is in continual evolutionas new labels are introduced.
The offer represents a journey up and down – and back and forth across – the Italian peninsula and incursions into France to discover excellent vintages.

How did you become so interested in wine,stefano?
“There’s no drink with a longer history than wine: archaeological finds tell us that it was being produced even 10,000 years ago. Until the time of the Roman Empire it was a bitter drink, with a very high alcohol content, and it was routinely cut with water, honey, and spices. It was only in the Middle Ages, thanks to the work of the Benedictine monks, that production techniques improved to the point that wines began to resemble the ones we drink today. “History aside, I have always been fascinated by wine: it’s culture, color, scents. I’m blessed with a natural capacity to distinguish flavors – and irrepressible curiosity. Since I met my wife Maria and began working with her, I have specialized and greatly expanded my technical knowledge.”
Tell us about your work at the Ristoro. How do you choose wines for a client?
“By following three basic rules. First of all I like to speak with our clients, to learn their propensities to be able to propose the best matches with the dishes they have ordered. Then, I suggest wines from our territory – don’t forget that we are in Tuscany, one of the world’s foremost wine regions – but this doesn’t mean I don’t valorize other Italian and foreign excellences. Quite the contrary. I am very proud that my many labels represent the best wines from all of Italy and many from abroad. Finally, when selecting a wine, I do so with an eye to the quality-price ratio: another of the many ways we pamper our clients.”
