Our Menus

We believe in the strength of Tuscan cuisine, in its ancient flavors, in the gestures that are handed down.

But we also believe in the power of creativity, when it is driven by respect. Each dish is born from this balance: a tribute to tradition, with an open eye to contemporaneity.

 

Our menu follows the rhythm of the seasons, it is renewed every month and a half to enhance what the earth has to offer, at the best time.

We choose only excellent ingredients: Tuscan extra virgin olive oil, Carnaroli rice, Parisi eggs. Each element has a name, a story, a provenance that we know and respect.

 

Because true quality begins with bonds, with that mutual trust built with those who cultivate, raise, produce with passion.

For us, eating is a way to rediscover lost time. It is rediscovering flavors that remind us of home, of childhood, of ancient gestures. Our fresh handmade pasta is born like this: from the quality of the flour, from the fresh eggs of the day, from the wisdom of the hands that knead as they once did. From the thin sheet of pasta, carefully rolled out, pici, pappardelle, tagliolini and filled shapes take shape that absorb sauces and caress the palate, with that delicacy that only tradition can teach.

The Grid

Daniele is our grill master: expert, precise, passionate. Steaks, slices, fillets, sirloin and cockerel come to life under his hands, cooked to perfection, enveloped in the aroma of live fire. And while the meat sizzles, outside the garden opens onto vineyards and olive groves: the pleasure of an outdoor dinner, among summer scents and Tuscan silence.

The Pizza

If you don't want to give up the pleasure of a pizza made to perfection, at Ristoro L'Antica Scuderia the warmth of our Valoriani wood-fired oven awaits you. It is there that every dough comes to life, crispy, fragrant, alive, thanks to the mastery of our pizza chef and the timeless charm of traditional cooking.
